Nature's Perfect Condiment

Wine is often called "nature's perfect condiment." When matched with the right food, it refreshes the palate and enhances a meal. Our taste buds perceive only four things: salt, sweet, bitter and acid. When wine meets food, these components combine to create a variety of taste sensations. And while there are no absolute rules for matching wine and food, there is little question some pairings are more complementary than others are.

With the belief that wine adds to the enjoyment of a meal, our Culinary Director John Sarich has assembled a collection of fresh, easy to prepare recipes and suggested wine pairings. We think you'll find them perfectly suited to the season. Enjoy!

"Tour de France" Chef's Dinner- Menu
From the first crunch of Chef Kurt’s Pommes Gaufrette with Tuna Tartare & Caviar to the last bite of Tarte Tatin with Grand Marnier Creme Anglaise, à l’œuvre on reconnaît l’artisan! Reservations to our annual French dinner always get snatched up like a platter of warm, golden, puffy Pommes Dauphine. "We Love it!" Chef's Dinner- Menu
We Love It! was the theme for our Valentine’s Chef Dinner, and we did! Each chef created a dish that, for them, evokes love & passion. After six mind-blowing rounds of the Chateau’s most amorous wine & food pairings, our coupled guests didn’t linger very long over the chocolate-dipped strawberries .... Perhaps they had somewhere else to be, wink-wink.

"A Celebration of Latin America" Chef's Dinner- Menu
Our first chef dinner of the new year featured the fiery, sybaritic flavors of Latin America - a perfect way to light up a drizzly January evening. Chef Kim Marshall poured some of the Chateau’s most spirited, food-loving wines while guests feasted upon regional specialties from Oaxaca, Cuba, Brazil & Argentina.
