Fresh Fruit Napoleon

Pastry Cream

Ingredients:

1 pint milk
½ tsp vanilla
5 Tbsp cornstarch
4oz sugar
¼ tsp salt
2 eggs
1 banana (optional)

Instructions:

Bring milk to a boil in a heavy-bottomed saucepan. Whisk together the cornstarch, sugar, and salt. Gradually add the eggs and mix until smooth. Add half of heated milk slowly, using a whisk. Pour the egg mixture back into the pan. Continue cooking over low heat stirring constantly until the mixture boils. Cook about 1 minute until thickened. Add the vanilla and pour into a bowl. Cover with plastic wrap or parchment paper. Refrigerate.

To give this a more tropical flavor, add ¼ rum to the egg and cornstarch mixture. Then after the mixture has cooled, puree a banana and fold into the pastry cream (optional).

Meringue Wafers

Ingredients:

3 large egg whites, at room temperature
pinch of salt
½ cup sugar
1 cup sweetened flake coconut
¼ tsp sesame seeds

Instructions:

Preheat oven to 325°. Butter and flour 3 baking sheets. Cut a template from a plastic sour cream or yogurt container. Remove the rim and draw a 4 circle in the center, then cut it out. Whisk the egg whites and salt in a bowl of an electric mixer. Beat in high about 3 minutes until medium soft peaks. Keep mixing, gradually adding ¾ of the sugar and the peaks are shiny and firm about 4 minutes. Add remaining sugar and beat another 2 minutes. Fold in ½ the coconut. Place the template on a prepared baking sheet and spoon a Tbs of meringue in the center of the ring. Smooth the batter to fill the template with a thin layer of batter. Remove the template and continue making circles to fill the pan. Sprinkle with coconut and sesame seed. Bake 5-7 minute until they just begin to color. Slide a spatula under the wafer to remove from the baking sheet. If you can leave the pan in the oven while removing the wafers it will be easier, as they become very fragile as they cool. After cooling they can be stacked to store.

Meringue Wafers
Pastry Cream
Fresh Mint

Instructions:

Prepare fruits of the season- berries, mangoes, kiwi, papaya, pineapple, etc. Place a wafer on the serving plate a spoonful of the pastry cream, layers of fruit then another wafer. Continue another layer and top with a wafer. Drizzle fruit sauce around the edge of the napoleon. Garnish with fresh mint.
