Indian Spiced Copper River King Salmon

Indian-Spiced Salmon

Ingredients:

1 cup plain yoghurt
2 jalapeno pepper, chopped finely (vary amount for more or less heat)
3 Tbs fresh lemon juice
3 cloves garlic, finely minced
3 Tbs fresh ginger, peeled and finely minced
1 Tbs garam masala
½ tsp tumeric
1 Tbs ground cumin
1/2 Tbs ground coriander
1 tsp kosher salt
6- 6oz Copper River King Salmon portions
Juice of 1 lime
Mango salsa, recipe follows

Instructions:

Place first 10 ingredients into a blender or food processor and puree. Pour mixture over salmon, taking care to coat each piece. Let marinate for 1 hour.

Heat grill to medium high heat. Grill salmon until done, about 4-5 minutes per side, depending on thickness of fish. Transfer to serving plate and squeeze with fresh lime juice. Top with mango salsa & serve.

Mango Salsa

Ingredients:

2 mangoes, best if not too ripe
¼ cup finely chopped red pepper
1 jalapeno, seeded and finely minced
2 Tbs chopped cilantro
2 Tbs finely chopped red onion
Juice of 1 lime
Kosher salt, to taste

Instructions:

Peel & dice mangoes into ¼” pieces; place in a small bowl. Add red pepper, jalapeno, cilantro, and red onion; mix gently. Season to taste with lime juice and salt.

Note: Depending on ripeness of mangoes, extra lime juice may be needed. If mangoes are really green, add a pinch of brown sugar to enhance sweetness.
