Oysters Rockefeller

with Fresh Herbs & Breadcrumbs

Wine Suggestion: Columbia Valley Pinot Gris, Columbia Valley Sauvignon Blanc, Horse Heaven Vineyard Sauvignon Blanc

Oysters

INGREDIENTS

1 stick unsalted butter, softened
1/4 small white onion, grated
1/2 cup bread crumbs
Kosher salt & pepper, to taste
1/4 tsp celery salt
Tabasco sauce, to taste
Good squeeze of lemon juice
4 teaspoons chopped fresh herbs, such as Italian parsley, chives, chervil, and tarragon
24 freshly shucked oysters on the half shell

INSTRUCTIONS

Preheat oven to 450°. Pour generous amount of rock salt onto baking tray -- this will keep oysters from tipping over in the oven.

Place all ingredients, except oysters, in medium bowl; mix thoroughly. Spread mixture over oysters and place on prepared baking tray. Bake until heated through and bread crumb mixture is golden brown, about 10-15 minutes.
