4 slices applewood-smoked bacon
Remove tough skin of sausage and cut into pieces small enough to fit inside the date. Put a sausage piece inside a date and wrap date around to enclose it. Wrap a small piece of bacon around each date and secure with toothpick.
Place cast iron skillet over medium-low heat. Fry dates, in small batches, taking care not to crowd the pan, until bacon is golden brown on all sides.
