Asian Noodle Salad

with Peanut Dressing

Asian Noodle Salad

Salad

INGREDIENTS

8 oz chuka soba noodles
½ yellow pepper, julienned
½ red pepper, julienned
1 carrot, peeled, scored and sliced thinly
2 cups broccoli florets, snow peas, or asparagus, blanched
4-6 green onions
1 cup shredded napa cabbage
½ cup cashews or peanuts
1Tbsp vegetable or peanut oil

INSTRUCTIONS

Cook the noodles according to the package instructions. Drain and cool. Toss with 1 Tbsp vegetable or peanut oil. Add all other ingredients and combine well. Toss with dressing until well coated.

Dressing

INGREDIENTS

1 Tbsp finely chopped shallots
1 clove garlic, finely chopped
3 Tbsp peanut butter
1 Tbsp coconut milk
½ tsp chili paste
1 Tbsp lime juice
2 tsp brown sugar
¼ cup rice vinegar, unseasoned
1/3 cup vegetable oil or peanut oil
salt to taste
1 tsp galanga root, freshly grated if available

INSTRUCTIONS

Add all ingredients to a blender and mix completely. Taste for salt, lime and brown sugar.
