Wine Suggestion: Columbia Valley Gewürztraminer, Cold Creek Vineyard Riesling
½ head green cabbage, shredded
½ head red cabbage, shredded
½ head nappa cabbage, shredded
2 large carrots, shredded
2 cups snow peas, blanched and sliced into thin julienne strips
3 green onions, thinly sliced
1 yellow pepper, thinly julienned
1 red pepper, thinly julienned
¾ cup peanuts, chopped
In a large bowl, toss all the vegetables to combine. Drizzle the dressing over the slaw, and toss to completely coat with the dressing. Top with chopped peanuts.
1/8 cup sugar
1/8 cup lime juice
¼ cup rice wine vinegar
¼ cup vegetable oil
¼ cup water
¾ cup peanut butter
½ tsp red pepper flakes
1 jalapeno pepper
In a blender, combine the above ingredients. Puree until completely smooth.
