Recommended Thanksgiving Wine This won a blind tasting of cabernets I attended last year, beating out many more expensive names from Napa and elsewhere. It's under $10 at Hi-Time Wine Cellars in Costa Mesa, surely one of the best cab bargains out there. According to the winery, syrah (15 percent) was added to the blend for sweet fruit character, while a touch of malbec provides bright tannins. The 6 percent merlot contributes structure.

The huge Columbia Valley occupies south-central Washington, fitting snugly in the rain shadow of the Cascade Mountains. Sun-drenched and sheltered, the region is ideal for wine-growing. The conditions work well for many grapes, but Cabernet Sauvignon benefits more than most. High elevation means cool nights and a long growing season. This gives thick-skinned Cabernet grapes a chance to ripen fully and evenly, yielding a soft mouthfeel and juicy blackberry flavors. Try this wine with a sirloin steak or pot roast.
