To Pair with Crème Brûlée - What do you know? Two date nights in a row. Well, a girl has to enjoy the sweet things in life, like a crunchy, caramelized topping that breaks through to a creamy custard. No better way to wash it all down than with the Chateau Ste. Michelle Columbia Valley Riesling ($9). The wine is described as medium-dry, meaning that it has a hint of sweet fruitiness that enriches the burnt sugar topping and melds with the custard's vanilla flavoring.

Riesling is one of the more versatile wine grapes. It is made in many styles, explained with often confusing German wine labels, ranging from very dry to very sweet. Riesling wines have found a home in Washington’s Columbia Valley, where the latitude gives lots of sunshine during the ripening season. It has a residual sugar level of 5.22 percent, which falls into the 5 to 10 percent range of sweet dessert wines. Dry wines are usually in the 0.2 to 0.3 percent range. It’s not overly sweet, though, with plenty of orchard and stone fruit flavors balanced with acidity for freshness. So you don’t have to wait until dessert to enjoy it. This is, perhaps, the most remarkable wine in the Pacific Northwest. How Ste. Michelle manages to make something so delicious, so broadly appealing, so balanced, so consistent and in such large quantities is astonishing. This wine finished No.2 in our big Riesling competition this summer, and it shows its staying power here. It opens with subtle aromas of spices, camomile tea, anise and pears, followed by superb flavors of minerals, apples and Asian pears.
