Chenin Blanc, Sauvignon Blanc and Muscat Canelli juice was fermented for 3 weeks in stainless steel to highlight the bright fruit flavors. A cool fermentation with fruit forward yeasts helped to preserve the ripe fruit characteristics of these aromatic grape varieties.
