In typical March fashion we’ll spend this first day of spring ‘in like a lion, and out like a lamb’ as we transition from winter to spring in the world of cheese. We’ll compare and taste big, bold wines and firm cheese as well as brighter wines and fresher cheeses. We’ll discuss why the season matters, and why we start to crave lighter fresher cheeses and wines as spring arrives.
