Arugula Pesto, Prosciutto Pizza

Arugula Pesto, Prosciutto Pizza

Ingredients:

3 cups arugula
2 garlic cloves
1/2 cup olive oil
1/2 cup Parmesan cheese
salt and black pepper

12 inch prebaked pizza crust
3 ounces Fontina, grated
5 thin slices Prosciutto

Instructions:

Place the arugula, garlic, olive oil and Parmesan cheese in a blender. Blend until you have a nice puree. Season with salt and pepper to taste.

Spread the pesto on the pizza round (you might not need all the pesto, use the leftovers to toss with pasta). Spread the Fontina over the pizza. Bake in a 450 degree oven for 6 to 8 minutes. When the pizza is crispy remove from the oven and lay on the Prosciutto. Let rest for 1 minute. Cut and serve.
