Garlic Shrimp Linguine

Garlic Shrimp Linguine

Ingredients:

20 prawns, peeled and tails removed
4 Tbsp olive oil, divided
1/2 c onion, minced
6 garlic cloves, minced
1/2 tsp dry thyme
A pinch of red chili flakes
1 cup Marsanne wine, can be substituted with another dry white wine
2 cups heavy cream
1/2 lb linguine pasta
basil
lemon zest and juice
salt and pepper

Instructions:

Heat 2 Tbsp of olive oil on medium heat in a medium sized sauté pan. Add the prawns to the pan and brown on each side for 1-2 minutes, or until fully cooked. Remove and set aside. Put the last 2 Tbsp of olive oil in the pan and add the onions. Sauté until translucent (2-3 minutes), add the thyme, red chili flakes, and garlic, and cook for another minute. Add white wine and simmer until reduced by half. Add the heavy cream and simmer for 4-6 minutes, or until it thickens to a sauce-like consistency. Add the ½ tsp of lemon zest, lemon juice and season with salt & pepper to taste.

While the sauce is simmering, cook linguine according to box instructions and then drain. Add the pasta to the sauce along with the cooked prawns & basil. Toss to coat the pasta with the sauce. Enjoy with a glass of Chateau Ste. Michelle's 2015 Marsanne!
