Grilled Wild King Salmon

with Avocado & Corn Salsa

Salsa

Ingredients:

1 medium ripe red tomato, cut into ¼” dice
1 ear of fresh corn, grilled and cut off cob
1 avocado, cut into ¼”dice
1 Tbs red onion, ¼” dice
2 green onions, thinly sliced into rounds
1 Tbs chopped Cilantro
Juice of 1-2 limes
1 tsp vegetable oil
Kosher salt to taste

Instructions:

Place the first 6 ingredients in a bowl. Add the juice of 1 lime and vegetable oil, toss to coat and then season with salt to taste. Add more lime as needed to make the salsa zesty!

Grilled Wild King Salmon

Ingredients:

4- 5 oz portion of salmon fillet, skinned
vegetable oil
kosher salt & fresh ground black pepper

Instructions:

Preheat the BBQ, lightly oil the salmon and season with salt and pepper. Place the salmon over medium high heat. Cook on each side for 3-5 minutes depending on the thickness of the fish. Do not overcook! Squeeze lemon over each piece and top with avocado & corn salsa.
