Italian Sausage and Gorgonzola Flatbread

Italian Sausage and Gorgonzola Flatbread

Ingredients:

2 flatbreads, brand of your choice
4 Tbsp Extra virgin olive oil, divided
6 oz ground mild Italian sausage
3 garlic cloves; 2 minced, 1 cut in half and set aside
2 cups kale chopped
1/2 c grated Italian fontina
1/2 lb gorgonzola dulce cheese, crumbled/ broken apart
Kosher salt

Instructions:

Heat 1 tablespoon extra virgin olive oil in a sauté pan over medium heat. Brown the Italian sausage until fully cooked (5-8 minutes), set aside. Brush the flatbreads with 2 tablespoons of extra virgin olive oil. Sprinkle a pinch of salt over the flatbreads. Cut one garlic clove in half and rub it on the flatbreads for flavor. Sprinkle the fontina and crumbled gorgonzola dulce evenly over the flatbreads. Scatter cooked sausage over the flatbreads. Place the 2 flatbreads on a cookie tray and in a 400 degree oven and cook for 8-10 minutes.

While they are cooking heat 1 tablespoon extra virgin olive oil in a saute pan over medium heat. Cook kale and minced garlic for 2-3 minutes. When flatbreads are done, top with sauteed kale and garlic. Cut into serving pieces & enjoy with a glass of Chateau Ste. Michelle's 2014 Barbera!
