Lemon Cookies

Cookies

Ingredients:

1 1/4 cup all-purpose flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cup unsalted butter, softened
1 teaspoon grated lemon peel
1 tablespoon lemon juice

Instructions:

Combine all cookie ingredients in a mixer bowl. Beat at low speed, scraping bowl often, until well mixed (2-3 minutes).

Divide dough in half. Shape each half into 8 x 1 inch roll. Wrap in plastic wrap and refrigerate until firm (1-2hours).

Heat oven to 350 F. With a sharp knife, cut each half into 15 slices. Place 2 inches apart on a parchment covered cookie sheet. Bake for 8-12 minutes or until set. Cool completely.

Frosting

Ingredients:

3/4 cup powdered sugar
1/4 cup butter
1 teaspoon grated lemon peel
1teaspoon lemon juice

Instructions:

In a small bowl combine all frosting ingredients. Beat at medium speed until fluffy. Frost cooled cookies.
