Lobster Hushpuppies with Garlic Aioli
¾ C Buttermilk
2 C Cornmeal
¾ C All Purpose Flour
2 tsp Baking Powder
1 tsp Salt
¼ tsp Pepper
¼ C Green Onion, chopped
1 Lemon, zested
12 oz Lobster
Vegetable oil for frying
In a bowl combine all the dry ingredients, including the green onions and lemon zest.
In another bowl combine the buttermilk and eggs. Whisk well to combine.
Mix the wet and dry ingredients together to form a batter.
Chop the lobster meat and fold in to the batter.
Fill a deep pot with about 3 inches of vegetable oil and heat to 350 degrees. Working in small batches, drop scoops of mix into the hot oil (a small cookie scoop works well). Cook until golden brown and cooked all the way through, about 3 minutes. Drain on a paper towel and allow to cool slightly before serving.
1 C Mayonnaise
2 TBSP Fresh chopped or roasted garlic
1 TBSP Lemon juice
Combine all ingredients and serve as a dipping sauce.
