Port & Mustard Glazed Chicken

Marinade & Chicken


¼ cup olive oil
¼ cup port
¼ cup whole grain mustard
2 Tbsp soy sauce
2 Tbsp black pepper
3 Tbsp white Worcestershire sauce
1 Tbsp chopped garlic
1 shallot, minced
¼ cup lemon juice
1 tsp salt
6 chicken breast or thighs


Combine all ingredients except chicken in a bowl. Add chicken and toss to coat well; marinate at least 1 hour.

Remove chicken to a plate; transfer marinade to a saucepan. Bring marinade to a boil over high heat; reduce heat to low & simmer for 5 minutes.

Bake or grill chicken, basting with cooked marinade.
