Prosciutto Stuffed Dates with Blue Cheese

Ingredients:

12 Medjool Dates
½ Cup Blue Cheese
Zest of half a lemon
6 Slices of Prosciutto

Instructions:

Make a split in the date and remove the pit. Combine the blue cheese and lemon zest. Divide the cheese amongst the dates and stuff into the slits. Cut a slice of prosciutto in half lengthwise. Roll the date up in it. Repeat with remaining dates. Chill for 30 minutes. Preheat an oven to 400 degrees. Bake for 8 minutes. Allow to cool for 5 minutes before eating.
