Scallop-Mango Ceviche

Scallop-Mango Seviche


1 lb scallops, diced
1 mango, diced
2 Tbs chopped cilantro
1 jalapeno, finely diced
Lime juice, to taste, about 3-4
Kosher salt & pepper, to taste


Stir ingredients together in mixing bowl; store in refrigerator for about 30 minutes. Serve in individual cups or on tortilla chips.
