Spicy Sausage and Arugula Pizza Bread

Spicy Sausage and Arugula Pizza Bread

Ingredients:

1 Sourdough French Loaf 
3 Hot Italian Sausages (mild is ok if you prefer)
1 cup Kalamata Olives, chopped up
4 balls of Fresh Mozzarella 
1 cup Arugula, roughly chopped
1/4 cup Parmesan Cheese, grated
1 cup San Marzano Tomato Sauce
salt and pepper

Instructions:

Boil, microwave, or grill the sausages until they are just cooked through.  Allow to cool and then slice into 1/4 inch slices.

Split the french loaf in half lengthwise, like you were going to make a sandwich with it.  Liberally brush tomato sauce on each half.  Slice the mozzarella into 1/4 inch slices and place evenly on bread.  Sprinkle on the chopped olives.  Place the sausage slices in a single layer across the bread.  Sprinkle lightly with salt and pepper.  Transfer to a baking sheet.

Preheat oven to 400 degrees.  Place pizza bread in for 5 minutes.  Top with the parmesan cheese and return to oven for another 5 minutes.  Remove from oven and top with arugula.  Allow to cool for 1 minute.  Cut bread into slices and serve.
