Wild Mushroom and Beecher's Flagship Grilled Cheese Sandwich

Wild Mushroom and Beecher's Flagship Grilled Cheese Sandwich

Ingredients:

½ Pound Mixed wild mushrooms, sliced
1/3 Cup Diced Onion
3 Garlic Cloves, chopped
2 Tbsp Dry Sherry
3 Tbsp Dijon Mustard
8-10 Ounces Beecher's Flagship Cheese, cut into slices
12 slices Brioche
¼ Stick Butter

Instructions:

Cook the onions over medium heat until they start to become translucent, about 5 minutes. Add the mushrooms and garlic to the pan and cook until mushrooms are cooked through, about 10 minutes. Deglaze with the sherry and season with salt and pepper. Allow to cool.

Spread Dijon on 6 of the slices of bread. Top this with slices of cheese. Divide the mushroom mix amongst the sandwiches and put the remaining six slices of bread on top.

Heat a flat pan or griddle over medium heat. Also preheat an oven to 400 degrees. Melt the butter in the pan and brown the sandwiches on both sides. Place the sandwiches in the preheated oven and cook until the cheese is fully melted, about 7 minutes. Alternately you may brown the sandwiches with a cover on your pan. But it is easy to burn the bread this way.

Delicious and wine friendly additions to this sandwich would include bacon, prosciutto, or arugula.
