Bacon, Brie & Berry in Puff Pastry

Ingredients

  • 2 sheets puff pastry, store bought
  • 1 large round brie cheese
  • 1/2 cup blackberry or raspberry jam
  • 8 slices bacon cooked and crumbled

Directions

  1. Preheat oven to 375°F
  2. Remove puff pastry from the freezer and set out for 10-15min. till pliable.
  3. In the meantime, cut the brie round into 1” pieces. Make sure brie has rind on only 2 sides. If there is more than that, it changes the texture and flavor balance.
  4. When dough pliable open the folds so you have one large square. Roll out slightly with rolling pin, use flour on pin if dough is sticky.
  5. Use a sharp knife or pizza cutter to cut the large square into 16 smaller squares. Repeat with the second sheet.
  6. Press squares into a greased mini muffin tin. Fill each square with a piece of brie cheese, 1/2 teaspoon jam and crumbled bacon.
