Broccoli, Spinach, and Goat Cheese Frittata

Ingredients
- 8 slices bacon, chopped
- 1 (12-oz) pkg broccoli florets, coarsely chopped
- 2 cloves garlic, minced
- 1 (10-oz) container baby spinach
- 10 large eggs
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 (4-oz) container crumbled goat cheese
- ¼ cup microgreens
Directions
- Preheat oven to 400°F.
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in pan.
- Cook broccoli and garlic in hot drippings 5 to 6 minutes or until broccoli is crisp-tender.
- Gradually stir in spinach until wilted. Stir in bacon.
- Meanwhile, whisk together eggs and cream in a bowl until blended; season with salt and pepper, if desired. Add egg mixture to skillet; cook until eggs begin to set around edges of skillet. Sprinkle with cheeses.
- Transfer skillet to oven and bake 10 to 12 minutes or until center is set. Garnish with microgreens.
