Mediterranean Roasted Turkey Breast with Grapes

Ingredients
- 1 (5 to 9-pound) JENNIE O® Premium Basted Bone In Young Turkey Breast with Gravy Packet
- 1 Tbsp kosher salt
- ¼ cup olive oil
- 8 cloves garlic, minced
- 2 Tbsp chopped fresh parsley
- 1 tsp paprika
- ½ tsp ground nutmeg
- ¼ tsp ground allspice
- 4 shallots, halved
- 4 stalks celery, cut into 1-inch pieces
- 1 lb seedless red grapes, stems removed
Directions
- Thaw turkey according to package directions. Remove and discard gravy packet.
- Rub salt over and under skin all over turkey breast. Cover, and refrigerate 2 days.
- Stir together oil, garlic, parsley, paprika, nutmeg, and allspice. Rub mixture over and under skin all over turkey breast.
- Arrange shallots and celery on a rimmed baking sheet. Place turkey, breast-side-up, over vegetables.
- Let stand at room temperature 30 minutes.
- Preheat oven to 350° F.
- Bake 2 hours. Add grapes to pan, and bake 30 minutes longer until a thermometer inserted registers 165° F.
- Remove from oven, tent loosely with foil; let stand 20 minutes.
- Slice turkey, and serve with roasted grapes and vegetables.
