Pretzel-Crusted Chicken with Smoked Cheddar Fondue

Ingredients
- 2 large eggs
- 1 Tbsp whole grain Dijon mustard
- 1½ cups crushed pretzels
- 1 cup panko breadcrumbs
- 2 Tbsp olive oil
- 1 Tbsp minced fresh thyme
- 2 lb boneless, skinless chicken breasts
- 4 oz smoked Cheddar cheese, shredded
- 4 oz mozzarella cheese, shredded
- 1 Tbsp cornstarch
- ½ cup Chateau Ste Michelle Riesling
- ½ Tbsp lemon juice
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp chopped fresh parsley
Directions
- Preheat oven to 400°F. .
- hisk together eggs and mustard in a shallow bowl; stir together pretzels, breadcrumbs, oil, and thyme in a separate shallow bowl.
- Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
- Dip chicken in beaten egg mixture, letting excess drip off; dredge in pretzel mixture to coat.
- Place coated chicken on a greased wire rack on a large rimmed baking sheet. Bake 20 to 25 minutes or until chicken is done.
- Meanwhile, toss together cheeses and cornstarch in a bowl.
- Bring wine to a simmer in top of a double boiler. Add 1 cup cheese mixture to simmering wine, stirring until melted. Repeat procedure, adding cheese 1 cup at a time, stirring until cheese is melted after each addition.
- Stir in lemon juice,garlic powder, salt, and pepper until blended.
- Serve cheese fondue with chicken. Sprinkle with parsley.
