Pretzel-Crusted Chicken with Smoked Cheddar Fondue

Ingredients

  • 2 large eggs
  • 1 Tbsp whole grain Dijon mustard
  • 1½ cups crushed pretzels
  • 1 cup panko breadcrumbs
  • 2 Tbsp olive oil
  • 1 Tbsp minced fresh thyme
  • 2 lb boneless, skinless chicken breasts
  • 4 oz smoked Cheddar cheese, shredded
  • 4 oz mozzarella cheese, shredded
  • 1 Tbsp cornstarch
  • ½ cup Chateau Ste Michelle Riesling
  • ½ Tbsp lemon juice
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp chopped fresh parsley

Directions

  1. Preheat oven to 400°F. .
  2. hisk together eggs and mustard in a shallow bowl; stir together pretzels, breadcrumbs, oil, and thyme in a separate shallow bowl. 
  3. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. 
  4. Dip chicken in beaten egg mixture, letting excess drip off; dredge in pretzel mixture to coat. 
  5. Place coated chicken on a greased wire rack on a large rimmed baking sheet. Bake 20 to 25 minutes or until chicken is done. 
  6. Meanwhile, toss together cheeses and cornstarch in a bowl.
  7. Bring wine to a simmer in top of a double boiler. Add 1 cup cheese mixture to simmering wine, stirring until melted. Repeat procedure, adding cheese 1 cup at a time, stirring until cheese is melted after each addition. 
  8. Stir in lemon juice,garlic powder, salt, and pepper until blended.
  9. Serve cheese fondue with chicken. Sprinkle with parsley.
