Goat Cheese Truffles

Ingredients

  • 1 (10-oz) French baguette 
  • ¼ cup olive oil 
  • 2 (8-oz) blocks cream cheese, softened
  • 1 (8-oz) log goat cheese 
  • 3 Tbsp honey
  • ½ tsp ground cinnamon 
  • ¼ tsp kosher salt
  • 1 ½ cups finely chopped pecans 
  • 1 ½ cups finely chopped dried cranberries
  • ¼ cup finely chopped fresh parsley 

Directions

  1. Preheat oven to 425° F. 
  2. Thinly slice baguette and place slices on a lightly greased large baking sheet. Brush slices with oil. Bake 10 minutes or until browned and crisp. Cool completely. 
  3. Beat cream cheese, goat cheese, honey, cinnamon, and salt at medium speed with a mixer until blended. Cover, and refrigerate at least 1 hour or up to 3 days. 
  4. Stir together pecans, cranberries, and parsley in a bowl. Shape cheese mixture into 1-inch balls.
  5. Roll balls in pecan mixture to coat.
  6. Serve with crostini.
