Goat Cheese Truffles

Ingredients
- 1 (10-oz) French baguette
- ¼ cup olive oil
- 2 (8-oz) blocks cream cheese, softened
- 1 (8-oz) log goat cheese
- 3 Tbsp honey
- ½ tsp ground cinnamon
- ¼ tsp kosher salt
- 1 ½ cups finely chopped pecans
- 1 ½ cups finely chopped dried cranberries
- ¼ cup finely chopped fresh parsley
Directions
- Preheat oven to 425° F.
- Thinly slice baguette and place slices on a lightly greased large baking sheet. Brush slices with oil. Bake 10 minutes or until browned and crisp. Cool completely.
- Beat cream cheese, goat cheese, honey, cinnamon, and salt at medium speed with a mixer until blended. Cover, and refrigerate at least 1 hour or up to 3 days.
- Stir together pecans, cranberries, and parsley in a bowl. Shape cheese mixture into 1-inch balls.
- Roll balls in pecan mixture to coat.
- Serve with crostini.
