Gorgonzola Popover with Fig Onion Marmalade

Ingredients:

1 Onion
1C Red Wine Vinegar
1C Merlot
¼ C Sugar
6-8 Dried Figs
½ C Beer
3 tbsp butter
1/8 tsp salt
½ C Flour
2 Eggs
½ C Gorgonzola

Instructions:

Slice the onion into thin julienne. Heat a saucepan over medium heat and add the onions. Sweat until just starting to turn translucent, about 7-8 minutes. Add the vinegar and cook until almost evaporated. Add the Merlot and sugar and combine well. Dice up the figs and add them as well. Cover and leave at a heavy simmer until the liquid has evaporated. This will take 30 to 40 minutes. Allow to cool.

To make the popovers first preheat an oven to 375 degrees. In a saucepan combine beer and butter and cook to melt butter. When melted turn heat to low and add the flour and salt. Whisk well to combine and cook for 1 further minute. Remove from heat and add the cheese.

Line a baking sheet with parchment paper. Move batter into a piping bag and pipe quarter sized mounds. Bake for 10 to 12 minutes, or until popovers are well browned and cooked through. Allow to cool.

Cut the top off the popover and fill the inside with onion marmalade. Serve.
