Grilled Italian Sausage Sandwich

Grilled Italian Sausage Sandwich


4 Italian sausages... mild or hot
4 hoagie rolls, split and grilled
2 oz extra virgin olive oil
1 yellow onion, julienned
1 red pepper, julienned
1 yellow pepper, julienned
20 garlic cloves, roasted
2 oz sun dried tomatoes, julienned
1 oz capers, chopped
1 tsp dry thyme
1 tsp dry oregano
salt & pepper


Bring a small pot of water to a boil, add the sausages, reduce heat to a simmer and cook for 7 minutes.

Place a medium sized sauté pan on the stove over medium high heat. Add the olive oil, onions and peppers with a pinch of salt, sauté for 5 minutes. Reduce heat to medium and continue to cook for another 5 minutes or until the onions and peppers are soft and slightly caramelized.

Fold in the remaining ingredients and season with salt and pepper. (TIP: This mix can be made a day in advance, kept in your refrigerator, and reheated when time to use.)

Fire up your grill, grill your buns and Italian sausages. Top with pepper mix and enjoy!!
